八角为著名的调味香料，味香甜。八角果实在日常调味中可直接使用，如炖、煮、腌、卤、泡等，也可直接加工成五香调味粉。
药用
八角干燥成熟果实含有含芳香油、脂肪油、蛋白质、树脂等，提取物为茴香油，其中种子中含有茴香油1.7%-2.7%，干果和干叶的茴香油含量分别为12%-13%、1.6%-1.8%。茴香油的主要成分为茴香醚（Anethole）、茴香醛（Anisaldehyde）和茴香酮（Anisylacetone）、黄樟醚（Safrole）、水芹烯等。
功效
八角供药用，有祛风理气、和胃调中的功能，用于中寒呕逆、腹部冷痛、胃部胀闷等。但多食会损目发疮。
八角果具有健胃、驱风、镇痛、调中理气、祛寒湿，治疗消化不良和神经衰弱等功用。随着新药研制水平的不断提高，其用途不断扩大，以八角为原料提取的莽草酸可合成抗癌药和制取抗甲型或乙型流行性感冒药物。八角干果含莽草酸8%-13%，是最佳天然植物原料，除毒八角(莽草籽)含量比它高些外，还没有发现有潜在规模生产价值的植物。
禁忌：
阴虚火旺的眼病患者和干燥综合征、更年期综合征、活动性肺结核、支气管哮喘、痛风、糖尿病、热盛者少食甚至忌食。
