孜然粉主要由多种香料一起调配磨制而成的。 孜然粉 是我们生活中最常用的一种调味料之一。常用于烹饪牛、羊肉，能够祛除其腥味，令其肉质更加鲜嫩。
功效:
用孜然粉加工牛羊肉，可以祛腥解腻，并能令其肉质更加鲜美芳香，增加人的食欲。孜然粉具有醒脑通脉等功效，能祛寒除湿，理气开胃，祛风止痛。对消化不良、胃寒疼痛、肾虚便频均有疗效。用孜然粉调味菜肴还能防腐杀菌。
孜然粉不仅可以祛除肉的腥味，增强人的食欲，还具有防腐杀菌的作用 。在古时候，孜然可不像现在这样普及，当时的人们在祭祀的时候才会在祭品上面撒上一些孜然粉，一方面是为了防止祭品腐烂，另一方面也是为了让祭品的香味更能吸引神灵。可想而知当时的孜然是多么的珍贵。孜然不仅用于烧烤烹饪，还被用在了许多其它的方面。例如，在制作咖喱粉的原材料中也包含了孜然粉。
适宜人群:
适合人群：一般人都可食用。
适用量：每次3～8克。
温馨提示：用孜然粉调味，用量不宜过多。孜然性热，所以夏季应少食。
便秘或患有痔疮者应少食或不食。

孜然羊肉
【特点】 质地软嫩，鲜辣咸香，孜然粉味浓[3] 。
【原料】 羊肉300克，孜然粉15克，笋片50克，油1500克（约耗75克），料酒20克，盐1克，白糖15克，鸡蛋30克，味精7克，辣糊30克，水淀粉50克，香油10克，汤、面各少许。
【制作过程】
1、羊肉切片放碗里，加鸡蛋、淀粉、面，抓匀糊。 2、勺坐油，待油五成熟，下肉片划开后，放笋片，一起倒出。原勺留油，加辣糊、盐、糖、味精、料酒、孜然、汤、倒入肉片、笋，颠勺，拢点芡，淋香油，出勺即成。
孜然鸡翅
孜然粉的味道很让人喜欢，无论做排骨还是鸡肉都非常美味。这次的孜然鸡翅是临时想出来的主意，做法简单，卖相和味道都很好。可惜吃了一半才想起没用相机拍下来，只好等下次再补照片了。
【用料】鸡翅（中段）、孜然粉、香菜
【做法】
1.鸡翅洗净，用刀尖划开约两厘米的口子（深度及鸡肉），以便入味及快熟。
2.适量酱油、盐、白酒、白糖及少量生粉拌匀，腌半小时左右。
3.切姜丝、香菜末加入鸡翅拌匀。
4.每10分钟左右将鸡翅翻转，确保两面都能充分入味。
5.油倒入锅中烧热，姜丝、蒜头爆香后捞起扔掉。
6.火调小，将鸡翅放入锅中缓缓煎至金黄，翻转煎另一面至金黄。
7.洒入几滴酒，随即盖上锅盖捂几秒。
8.加入水和刚才倒入腌过鸡翅的汁液（淹过鸡翅一半即可），洒少量香菜末，加盖。烧开后文火焖。
9.大约5分钟后收汁后上碟。
10.在鸡翅上洒少许孜然粉，放几片香菜叶装饰，完成。
如果有烤箱，相信效果更好。
