【干辣椒的食用方法】
1.辣椒适用于炒、拌、炝和做泡菜等。
2.在切辣椒时，先将刀在冷水中蘸一下，再切就不会辣眼睛了。
3.火锅配料，熬制火锅底料时加入干辣椒，花椒等佐料，熬出的汤料麻辣鲜香。
4.干辣椒除用于火锅外，还普遍用于家常菜的烹调当中，比如“干煸肉丝”、“炒油菜”、“炒芥蓝菜”、“糖醋莲花白”、“脆炒三丝”、“干烧鱼”、“折二根炒腊肉”“爆炒田螺”“脆皮肥肠”等家常菜。
５.炒菜用。炒菜特别是时令蔬菜时，油烧至八成熟时，加入干辣椒，待辣椒炒至油亮时放入蔬菜，炒出的菜青香带辣，色香俱全。
６.佐餐用。五六十年代菜品少，许多该年代生人对此吃法记忆犹新。将适量油烧至七成熟，放入干辣椒，翻炒至油亮时起锅，放入少许盐，味精。以此下饭，实为饭遭炴，呵呵。
