大白菜是一种原产于中国的蔬菜，又称“结球白菜”、“包心白菜”、“黄芽白”、“胶菜”等，在粤语里叫“绍菜”。
民间常说：鱼生火，肉生痰，白菜豆腐保平安。
冬季吃白菜能养颜护肤；冬季空气干燥，寒风对人的皮肤伤害很大。白菜中含有丰富的维生素C、E，多吃白菜，可以起到很好的护肤和养颜效果。
食疗价值:
1．利肠通便，帮助消化 大白菜中含有大量的粗纤维，可促进肠壁蠕动，帮助消化，防止大便干燥，促进排便，稀释肠道毒素，既能治疗便秘，又有助于营养吸收。
2．消食健胃，补充营养 大白菜味美清爽，开胃健脾，含有蛋白质、脂肪、多种维生素及钙、磷、铁等矿物质，常食有助于增强机体免疫功能，对减肥健美也具有意义。
3．防癌抗癌 白菜含有活性成分吲哚-3-甲醇，实验证明，这种物质能帮助体内分解与乳腺癌发生相关的雌激素，如果妇女每天吃500克左右的白菜，可使乳腺癌发生率减少。此外，其所含微量元素“钼”可抑制体内对亚硝酸胺的吸收、合成和积累，故有一定抗癌作用。
4．预防心血管疾病 白菜中的有效成分能降低人体胆固醇水平，增加血管弹性，常食可预防动脉粥样硬化和某些心血管疾病。
保健食谱:
开水白菜 白菜心500克。将白菜心洗净，放入沸水中焯至断生，立即捞入凉开水中漂凉，再捞出顺放在菜墩上，用刀修整齐，放在汤碗内，加佐料，上笼用旺火蒸2分钟取出，滗去汤；用沸清汤250毫升过一次，沥水，炒锅置旺火，放人高汤，再加入少许胡椒粉，烧沸后，撇去浮沫，倒人盛有菜心的汤碗内，上笼蒸熟即成。本菜汤清如水，菜绿味鲜，具有益胃通便，增强食欲的功效。适用于热病愈后体虚消化力弱，大便不畅等病症。
【注意事项】大白菜性偏寒凉，胃寒腹痛，大便清泻及寒痢者不可多食。
[附方]
1.素白菜汤：白菜250g，切碎，投入沸水中，煮沸去生味，调以香油、食盐、味精即成。
本品能清热除烦利尿。用于烦热口渴，小便不利。
2.白菜肉片汤：白菜500g，除去外周老叶，洗净，切段；猪肉（半肥瘦）250g，洗净切片，拌水豆粉少许。白菜下沸水中煮至半熟时，放入猪肉，一同煮熟，以生姜、食盐、酱油、葱等调味。可分2次食。
此汤中白菜富含纤维素，专以通利大便；猪肉补血润肠。用于血虚肠燥，大便秘结。
3.白菜姜葱汤：白菜（连根茎）120g（切碎），生姜10g，葱白5根。以水煎汤服。
本方对感冒有一定防治作用。用于预防感冒，或感冒初起，发热咳嗽。
